Chamomile and Lavender Biscuits
Ingredients
20g dried lavender
20g dried chamomile flowers
500g of flour of your choice (wholemeal, brown semolina, tapioca flour, coconut – whichever works for you)
75g kefir
1 – Place lavender and chamomile in a saucepan and cover with at least 400ml of water
2 – Bring to a simmer and simmer gently for 2-3 minutes
3 – Take off the heat and leave to infuse for at least 1 hour (but can leave overnight)
4 – Strain off the liquid into a bowl and discard the flowers
5 – Place flour(s) into a bowl and add the kefir
6 – Add the liquid until you can bring together into a dough (bare in mind that grain free flours will require slightly more moisture)
7 – Chill dough and then roll out and bake for 12-15 minutes at 170.
All of these biscuit recipes will result in a fairly stiff dough. To make them softer and easier to work with, add more moisture (between 50 and 100g – using kefir, yoghurt, bone broth, water etc)
Ps – you can also make all of the biscuits with less flour and more moisture and turn it into a batter consistency. This can be used to fill silicone moulds.
If doing this, bake them on a lower heat for longer – 150° for 40 minutes ( checking halfway through to ensure they dont catch)
